The Galah wanted something louder. The Roo wanted something that would hold together under pressure.

The result is The Cartel.

A strong, full-bodied espresso blend built around dark chocolate, toasted almond and a long, balanced finish. It has enough depth and structure to push cleanly through milk, while still drinking with purpose as a strong black coffee.

This is not dark for the sake of being dark. It is developed to create body, sweetness and weight without tipping into ash, bitterness or burnt roast character.

In milk, the chocolate deepens and the almond note rounds out. As a black coffee, it is punchy, direct and properly structured.

BUILT FOR ESPRESSO

The Cartel is designed to produce a dense, syrupy espresso with enough body to remain present once milk is added.

The roast profile is developed to emphasise chocolate sweetness, toasted depth and a rounded mouthfeel while maintaining balance through the finish.

It works particularly well in flat whites, cappuccinos, lattes and short blacks. It also performs reliably in automatic coffee machines where strength, consistency and milk performance matter.

BREWING ORDERS

For espresso, start with:

Dose: 20 grams
Yield: 40 grams
Extraction time: 27 to 30 seconds

Use this as a starting point and adjust to suit your grinder, machine and preferred strength.

If the shot runs too quickly and tastes thin or sharp, grind finer.
If it runs too slowly and tastes dry or bitter, grind coarser.

The Roo changes one thing at a time.

The Galah turns every dial and claims the machine was already like that.

The Cartel is roasted, packed, and dispatched from our roastery and hideout in Dubbo, New South Wales.

Most orders leave within 48 hours. Because we roast fresh, dispatch may take up to 5 business days depending on the roasting schedule and order volume.

Good coffee is worth waiting a little longer for.
